Southwest Inspired Vegan Salad!

This is one of my favorite salads to make right now…

…because it has the perfect flavors for this time of year, it is low fat, and easy to make high carb (piled on top a heap of quinoa, sweet potatoes or rice), and it tastes SO good! Most of the ingredients are fresh from my local farmers market including the salsa I added to the dressing, nothing beats homemade salsa!

First, what are southwest flavors?

In foods they are:  Corn, beans, tomatoes, squash, jicama, sweet peppers, chile peppers (fresh and dried), lime, garlic, onion, avacado and rice. (To name a few).
In spices they are:  Cumin, Cilantro, chili powder, oregano, and paprika.
You get the idea…

Here is an delicious example of a salad I can’t get enough of and the key is it’s homemade dressing.

Tip: Blending veggies into your dressings is a great way to get amazing flavor and it creates an abundant sauce that covers each veggie without a bunch of oil or other additives.

This salad has:
1 head of red leaf lettuce
Fresh corn off the cob
Can of organic pinto beans
Cucumbers
Carrots
Red Peppers
Tomatoes

Dressing:
(Place all ingredients in your food processor, blend and pour over above ingredients, then shake together)
Handful of cilantro
3 or 4 radishes
Handful of cherry tomatoes
1/4 a red bell pepper
Half a lemon or lime
Half an avocado
A few tablespoons of fresh chipotle salsa
Dash of cumin, paprika, red pepper
Topped with a sprinkle of hemp seeds
