Taking care of yourself doesn’t have to be complic Taking care of yourself doesn’t have to be complicated. Sometimes all it takes is one really good pot of food. 🤌

These French Lentils might be the best lentil recipe I’ve made.

Plant-based protein, fiber, comforting goodness, and leftovers that make tomorrow a little easier.

I love them spooned over creamy mashed potatoes, but they’re also delicious with rice or roasted vegetables.

THE RECIPE
3 tablespoons olive
1 onion finely chopped
2 cloves garlic finely chopped
1-2 carrots finely chopped
1-2 celery sticks finely chopped
2 ¼ cups French lentils
1 teaspoon dried or fresh thyme
3 bay leaves
1 tablespoon sea salt

Place a large saucepan over medium heat and add oil.
When hot, add chopped vegetables and sauté until softened about 5-10 minutes.
Add 6 cups water, lentils, thyme, bay leaves and salt.
Bring to a boil, then reduce to a fast simmer.
Simmer lentils until they are tender and have absorbed most of the water 20-30 minutes. (I always cook longer).
If necessary, drain any excess water (I keep it) after lentils have cooked. Serve immediately, or allow them to cool and reheat later.
Serve them over creamy mashed potatoes for the ultimate cozy treat.

Save this recipe for later.

Tonight: Potato Red Lentil Soup + Tahini Chocolate Chip Cookies 🤎

This dal is cozy, grounding, and so simple, perfect for vata season.

POTATO RED LENTIL SOUP
1 tbsp olive oil
1 medium yellow onion diced
2 chopped carrots
2 chopped celery
2-4 chopped gold potatoes
2 garlic cloves minced
1 inch of ginger shredded
1 cup of red lentils
4 cups of vegetable broth
1 teaspoon of salt or more to taste
½ teaspoon of black pepper
½ teaspoon of turmeric
1 tsp cumin
1 cup of canned coconut milk
Optional add paprika

INSTRUCTIONS
1. In a large pot or Dutch oven, add olive oil, onions, carrots, and celery. Sauté for 5-7 minutes.
2. Add garlic, ginger, seasonings, and potatoes. Sauté for another minute or two.
3. Add lentils and veggie broth and bring to a gentle boil
4. Simmer for 15-20 minutes until the potatoes are soft and Mashable
5. Add salt, pepper and coconut milk. Simmer for another five minutes.
6. You can leave the soup chunky or use an immersion blender to blend some of the soup. I like to leave some chunks in there. You can also use a masher to mash it.
7. Top with lemon juice and adjust seasonings to taste.

TAHINI CHOCOLATE CHIP COOKIES
1/2 cup tahini
1/3 cup maple syrup
1 tsp vanilla extract
1/4 cup oat flour (or blend oats into flour)
1 cup oats (use organic, glyphosate-free + gluten-free)
1 tsp ceylon cinnamon
Sprinkle sea salt
1/4 cup chocolate chips
Optional: I like to add a few tablespoons of hemp seeds
PS. With the above recipe, I added cacao powder because I had limited chocolate chips. ;) 🤌

Instructions
Preheat oven to 350
1. Add all the wet ingredients to a large bowl and whisk together.
2. Add all dry ingredients (except chocolate) and stir until well blended.
3. Add chocolate chips.
4. Spoon into cookie circles on parchment paper lined baking sheet and bake for @ 10 mins.

SAVE this for your next cozy Sunday
